Whole Wheat Griddle Cakes

4 egg whites

1 Tbsp coconut nectar
1 Tbsp olive oil
½ cup skim milk
2 Tbsp raw bran
1 cup white whole wheat flour
½ tsp baking soda
½ tsp baking powder
2 Tbsp chopped Pecans

Beat wet ingredients with whisk or fork until well combined. In separate bowl combine dry ingredients. Add dry to wet stirring as you add them. Stir until all ingredients are combined to form batter. Stir in pecans.

Spray griddle with non-stick spray. Heat to the point where water droplets sizzle when dripped on surface. Pour batter onto hot griddle. (like traditional pancakes) Cook until golden brown on one side. Flip and repeat. Top with no sugar added applesauce, cinnamon, bananas or your choice of fresh, frozen or no sugar added canned fruit.

  1. Is coconut nectar as healthy as agave nectar or does it just affect the flavor? Could this be made with agave?

  2. You could use Agave Nectar. However, coconut nectar does not taste like coconut. It is not from the actual coconut, but from the tree. As far as healthyness goes, coconut nectar is actually healthier than Agave Nectar. It is processed differently and therefore maintains an even lower glycemic index than agave nectar. Some recent studies have indicated that in processing, agave nectar can become up to 90% fructose, thus some brands may not be as safe and healthy for those with blood sugar issues as once thought. Both of these ingredients are better than refined sugar. :)
